It is a cheese with a short period of maturation, with an intense aroma of fresh goat’s milk. The taste is refined with a light tasty note that reminds the typical scents of the wild Sardinian pastures. The typical basket-shape rind is light yellow. The inside is white tending to straw-yellow, with small few eyes.
