A “Canestrato Cheese”, that means it is characterized by a basket-shape rind, and it ages at least four months; it has an intense aroma and a flavorful taste.
The rind is grooved, deep brown in color tending to greenish because it is surface-treated with olive oil; the cheese inside is compact, semi-hard or hard depending on the length of maturation, and pale-yellow in color.
Pasteurized sheep’s milk, lamb rennet, milk enzymes, salt.
In cool place (around 10°C/50°F).
