Green Penne  with maturo “Medoro” Pecorino Sardo Cheese



INGREDIENTS (serves 4):

350g/12.4oz of penne pasta
150g/5oz string green beans
100g/3.5oz small green peas
300g/10.5oz asparagus tips
2 artichokes
150g/5oz mature Pecorino Sardo Medoro
1 lemon
1 onion
100g/3.5oz cooked ham (one slice)
50g/1.7oz butter
2 tablespoons of olive oil
1 clove of garlic
Salt and pepper

Boil the string beans, peas and asparagus in separate pans, then drain and leave to one side. In a large skillet, brown the finely chopped onion, then sauté the ham cut into cubes. Add the peas and a small cup of hot water. Season with salt and pepper, cover, then cook over low heat for 20 minutes. Chop the string beans in half and add to the peas, then cook for 10 minutes. In another skillet, heat the oil with the garlic, add the artichokes, then season with salt and pepper. Cook over moderate heat for 10 minutes. Add the chopped asparagus spears, then after 5 minutes add the tips. Boil the penne in salted water, then combine the vegetables in a skillet, removing the garlic. Drain the pasta and toss for a minute with the vegetables. Add shavings of Pecorino and serve.stampa
