Fava Beans and Pecorino Romano with Mint

INGREDIENTS (serves 4):

300g/10.5oz fava beans
100g/3.5oz Pecorino Romano shavings
Sprig of mint (nepitella – lesser calamint)
2 tablespoons of wheat flour (Italian type 00)
1 small cube of butter
1 tablespoon of chopped parsley

DIRECTIONS
Boil the fava beans for 3-4 minutes, then sauté with the butter and mint. Serve with a layer of Pecorino Romano and sprinkle with chopped parsley.stampa
