Eels with Regno di Sardegna Cheese
INGREDIENTS (serves 4):
500g/17.6oz small eels
100g/3.5oz grated Regno di Sardegna cheese
Clean the eels, remove the entrails and the head and boil in a little salted water. As soon as the eels are cooked through, remove them from the water with a slotted spoon and leave to drain. Keep whole or chop into 5-6cm/2in pieces and arrange on a heatproof serving plate, sprinkle with plenty of grated Regno di Sardegna cheese and place in the oven pre-heated to 200°C/392°F for a few minutes. Serve hot.
