Chicken Salad with Pecorino Santa Teresa

INGREDIENTS (serves 4):

1 celery heart, sliced into strips
1 lemon, peeled and sliced
200g/7oz Pecorino Santa Teresa, cut into strips
100g/3.5oz of cherry tomatoes, sliced
100g/3.5oz of chicory, sliced into strips
300g/10.5oz of chicken, boiled and sliced into strips
4 tablespoons of extra virgin olive oil
Salt to taste

DIRECTIONS
Place all the ingredients in a bowl with oil, salt and the sliced lemon. Toss gently and serve.stampa
