Bell Peppers with Capretto Cheese



INGREDIENTS (serves 4):

2 red bell peppers
2 yellow bell peppers
1 sprig of basil, julienned
2 tablespoons of extra virgin olive oil
150g/5oz Capretto cheese shavings
Salt to taste

Roast the bell peppers in the oven on a tray lined with wax paper until the skin begins to brown. Allow to cool slightly, then remove the seeds and the skin. Arrange on a serving plate, sprinkle with shavings of Capretto cheese, then season and dress with oil and basil.stampa
