Zucchini and Medoro Cheese Flan
INGREDIENTS (serves 4):
500g/17.6oz zucchini, sliced into 0.5 cm rounds
100g/3.5oz smoked pancetta
250g/8.8oz Medoro cheese, julienned
50g/1.7oz Medoro cheese, grated
Arrange the zucchini on a baking dish sprinkled with grated Medoro cheese. Alternate with a layer of julienned Medoro cheese and smoked pancetta, repeating the process for another two layers and finishing with a layer of just cheese. Bake in the oven at 180°C/356°F for 20-25 minutes until the upper layer of Pecorino Medoro turns golden.
