Special Salad with Brigante Cheese
INGREDIENTS (serves 4):
4 slices of white bread
150g/5oz Pecorino Brigante
100g/3.5oz steamed tuna (or canned in water)
100g/3.5oz sweet corn
100g/3.5oz soya bean sprouts
100g/3.5oz cherry tomatoes
6 teaspoons of extra virgin olive oil
Balsamic vinegar, to taste
Salt, to taste
Cut the bread into cubes and brown in the oven.
Place the tuna in the steamer and cook for around 2 minutes, timed from the moment the water boils.
Wash the arugula, cherry tomatoes, soya beans and the onion.
Drain the sweet corn.
Chop the Brigante cheese into cubes.
Julienne the onion.
In a salad bowl, mix the tuna with the cubed Pecorino Brigante, the arugula, the soya bean sprouts, the corn, the halved cherry tomatoes and the onion with some extra virgin olive oil and balsamic vinegar. Add the bread and serve.
