Rice with Shrimp and Santa Teresa Cheese

INGREDIENTS (serves 4):

200g/7oz boiled rice
300g/10.5oz shrimp
2 red onions, julienned
200g/7oz Pecorino Santa Teresa, julienned
100g/3.5oz cherry tomatoes, sliced
1 tablespoon of chopped parsley
8 tablespoons of extra virgin olive oil
Salt to taste

DIRECTIONS
Parboil the shrimp for around 5 minutes, then shell and cut the tails into three pieces. Combine all the ingredients in a bowl and dress with oil and salt. Stir gently and serve cold or at room temperature.stampa
